Mango, Red Pepper and Cucumber Salsa



  • 1 mango, finely diced
  • ½ cucumber, deseeded and finely diced
  • ½ lime, zest and juice
  • 15g fresh coriander, chopped
  • 1 red pepper, finely diced
  • 10g apple cider vinegar
  • 15g olive oil
  • Salt to taste


  1. Combine all the ingredients in a bowl and season to taste.
  2. Easy!
  3. Enjoy.

This is the salsa I made in my last cooking lesson. Its refreshing during or after a meal. It has health benefits like beta-carotene.
